Stuck at home because of COVID-19? While we know that this is a tough time, we've compiled a list of easy recipes that you can make at home with ingredients you most likely already have! That way we can all avoid leaving the house.
A staple!! Grab two pieces of bread, butter one side of each.. then put whatever cheese you have in between and watch it melt! + if you have a can of tomato soup hiding in your pantry somewhere.. that's always a plus.
Want to dress it up a little? Add some garlic salt, tomato & spinach inside of your grilled cheese.
Who doesn't like pancakes?! There are two ways you can make these... the first way is your normal & the second is my personal recipe that I absolutely LOVE!
1 1/2 cups flour
3 1/2 tsp baking powder
1 tsp salt
1 tsp sugar
1 1/4 cups milk
3 tablespoons butter (melted)
** I like to add a dash of vanilla extract to my batter... adds a little yum factor.
Mix em all together & pour onto skillet... once you see bubbles forming that means they're ready to flip!
now for the different kind...
Easy Oatmeal & Banana Pancakes
** IN YOUR BLENDER
1/2 cup milk (I use almond or coconut, but really.. whatever you have!)
1 tsp vanilla extract
1 1/2 cups oats
2 tsp baking powder
dash of cinnamon (to your liking)
Once blended all together, pour onto skillet & there you go!! Healthy, quick & delicious!
+ if you want them to be even yummier, spread PB on top of them.
Peanut Butter Chocolate Mug Cake
An easy & flourless dessert that you can make with things that are already in your pantry!
3 tbsp peanut butter, chunky or creamy
1 tsp cocoa powder
1 tbsp + 1 tsp sugar
Whisk together & microwave for 1 minute! Enjoy!!
Easy little recipe that is sure to make everyone happy!
8 ounces spaghetti (or any pasta you have!)
1/2 cup parmesan (even if its a shaker)
4 slices bacon, cooked & diced
as much garlic as you like
Italian seasoning (to taste)
garlic salt (to taste)
Boil pasta for 8-10 minutes depending on how you like it cooked, drain.
In a small bowl, whisk together eggs & parmesan, in a different pan cook bacon until brown & crispy but DON'T throw out the fat, add to egg mixture... stir in garlic then quickly stir the pasta into the egg mixture.. the heat from the pasta and bacon grease will cook the eggs! Sprinkle seasoning on to taste & ENJOY!
Veggie Fried Rice
Have random canned or frozen veggies? Here's an easy and quick meal that will definitely fill you up.
Boil rice, as directed (I like brown, but white works too!)
Any veggies you like, I usually do carrots, broccoli, mushrooms, onions, spinach...
I add garlic & red pepper flakes, however you can season to your liking.
Boil veggies in chicken or vegetable stock, then once rice is done, stir them both together & there you are!
Feel free to add in any protein you may have in your fridge/freezer!
Homemade Reeses Cups
Don't want to leave the house to get some of your favorite chocolate? Here's an easy recipe!
2 cups chocolate, melted
1/2 cup cup creamy peanut butter
1/4 cup powdered sugar
Line a standard muffin tin with cupcake liners & spray the bottoms with olive-oil spray
Melt half of the chocolate, line the bottom of the liners with chocolate, place the pan in the freezer for 15 minutes
Mix together the peanut butter and powdered sugar, then layer the pb mixture on top of the frozen chocolate
Melt the rest of the chocolate and pour on top of peanut butter mix
Freeze for 1 hour & ENJOY!
With a funky name you'd wonder what this is, but it's actually a really yummy food that can work for breakfast, lunch, or dinner!
1 1/2 tbsp milk
1 1/2 cups veggies of your choice
1/2 cup cheese
I like to use any leftover pasta in mine
1 tsp garlic salt
Mix all ingredients in separate bowl then pour in a non stick pan, sprayed with cooking spray.
Bake at 425 for 20-25 minutes, until the frittata is golden brown & fluffy!
